Ingredients

  • Raw mango: 1 kg
  • Split fenugreek/methi seeds: 250 gm
  • Split coriander seed: 100 gm
  • Split mustard seed: 25 gm
  • Sea salt: 100 gm
  • Turmeric powder: 2 tbsp
  • Red chilli powder: 2 tbsp
  • Asafoetida: 1 tbsp
  • Black pepper: 1/2 tbsp
  • Clove: 1/2 tbsp
  • Fennel seed: 1 tbsp
  • Groundnut oil: 250 ml
  • Raw mango: 2 kg
  • Split fenugreek/methi seeds: 500 gm
  • Split coriander seed: 200 gm
  • Split mustard seed: 50 gm
  • Sea salt: 200 gm
  • Turmeric powder: 4 tbsp
  • Red chilli powder: 4 tbsp
  • Asafoetida: 2 tbsp
  • Black pepper: 1 tbsp
  • Clove: 1 tbsp
  • Fennel seed: 2 tbsp
  • Groundnut oil: 500 ml
  • Raw mango: 4 kg
  • Split fenugreek/methi seeds: 1 kg
  • Split coriander seed: 400 gm
  • Split mustard seed: 100 gm
  • Sea salt: 400 gm
  • Turmeric powder: 8 tbsp
  • Red chilli powder: 8 tbsp
  • Asafoetida: 4 tbsp
  • Black pepper: 2 tbsp
  • Clove: 2 tbsp
  • Fennel seed: 4 tbsp
  • Groundnut oil: 1 liter

Directions

step 1
take split fenugreek seeds, split mustard seeds, Split Coriander Seeds, all in round shape on big pan,

take sea salt in powder form, put into round shape also, add asafoetida on center, take some clove, black papper seeds

take peanut/ groundnut oil , boil until the wheat kernels do not burst and rise to the surface of the oil.

take hot oil carefully and put on pan

and cover let rest for until its cool on room tempreture
step 6
than add turmeric powder, red chilli powder, mix well
step 7
take raw mango pieces wash with water , and strain mango pieces into strainer
step 8
add sea salt

add turmeric powder

mix well all things and cover rest for a night

next day remove the tangy water from mango , and store into bottle or use another pickle
step 12
and take cotton cloth spread raw mango pices let ir dry
step 13
add fennel seeds mix well
step 14
add dry mango pices into mixture
step 15
mix and store into airtite jar
step 16
2 inch oil on top of jar for to prevent the pickle from spoiling
step 17
this mango pickle is best for 2 years
